Cachapas Vegan Diet


Cachapas are vegan and are traditionally just made with fresh corn, water, salt, and a little sugar Enjoy the Recipe!

  • Jalapenos to taste
  • Cherry Tomatoes
  • Salt and Pepper to season
  • 3 cups fresh corn
  • 1 cup Mozzarella-style cheese (or any that will melt)
  • 3/4 cup almond or soy milk
  • 2/3 tablespoon plain flour
  • 2 tablespoon ground flaxseed
  • 2 tablespoon sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt


  1. In a food processor, mix together the corn, flour, milk, ground flaxseed, baking powder, sugar and salt and pulse until you’ve got something that looks like creamed corn. You can add in extra milk if you think it is too thick. Let the batter stand 10 minutes, while you stir occasionally.
  2. Put a large non-stick frypan on a medium heat and coat it with cooking spray.
  3. Scoop out about a 1/4 cup of batter, pour it into the pan and spread it out, by ‘rolling’ the pan. Give it 3 to 4 minutes to cook, then flip it. Spread out some of the shredded jalapenos, cheese, and sliced cherry tomatoes on the cooked side and let it cook for 2 to 3 minutes.
  4. Add seasoning and fold over the pancake, like it’s an omelet. Give it another minute and it is ready to be served. Repeat the process with the rest of the batter.
