Serves:8 to 12

Toss these curry-spiced cashews with golden and dark raisins to create a healthy and delicious party mix. They also lend pizzazz to hot cooked rice or couscous.

Ingredients:

  • 2 cups whole raw cashews
  • 2 teaspoons canola oil
  • 2 teaspoons mild curry powder
  • ½ teaspoon salt
  • A Pinch cayenne pepper (optional)

Directions:

  1. Preheat oven to 300F (150C).
  2. Place cashews in a shallow baking dish large enough to accommodate them in a single layer. Add the oil, curry powder, salt, and cayenne (if using) and toss well to thoroughly coat. Bake on the center rack about 25 minutes, until lightly toasted, turning halfway through cooking.
  3. Transfer baking dish to a wire rack and let cashews cool to room temperature before serving. Completely cooled nuts can be stored in an airtight container at room temperature up to 2 weeks.

Variations:

To make Cumin Toasted Cashews, use ground cumin in lieu of the curry powder. Blanched whole almonds can replace the cashews.
