Vegan Raging Raw Green Spaghetti Recipe

If you are looking for a light and a delicious vegan dish that you can enjoy with all your family, this spaghetti recipe just might do it!

Serves: 2 – 3 
Preparation time: 10 minutes
Cooking time: 0 minutes

Ingredients:

  • Squeeze of lemon juice
  • 1 clove Garlic
  • 2 large Zucchini
  • 2 cups fresh Basil leaves
  • 1/2 cup Extra Virgin Olive Oil
  • 1/2 cup Savory Yeast Flakes
  • 3 tablespoon Pine nuts
  • 3 handfuls of Snow Peas or Sugar Snap Peas, thinly sliced

Directions

  1. In a blender, blend together the oil, garlic, lemon juice, pine nuts, yeast and basil leaves until the resulting mixture is smooth.
  2. Turn the zucchini into noodles with a mandolin or Julienne vegetable peeler. The process is one of slicing the zucchini lengthwise to create long strips. Keep turning the zucchini as you work until only the core and the seeds remain. These can be discarded.
  3. Mix the “noodles” with the pesto and the snow peas. Season with a bit of pepper and salt and it is ready to be served.
