Vegan Guacamole-Stuffed Cherry Tomatoes Recipe

Because of their smaller size, grape tomatoes are not recommended substitutes for the cherry variety in this particular r. How, about the recipe. However, about one dozen small plum tomatoes (about 1 ounce each), halved lengthwise, pulp and seeds discarded, will work beautifully.


  • 24 cherry tomatoes
  • Salt
  • ½ cup prepared guacamole (Recipe)
  • Chopped fresh cilantro for garnish


  1. Cut a thin slice from the stem end of each tomato and discard. Using a melon baller or small spoon, remove and discard all pulp and seeds.
  2. Season the insides lightly with salt and turn upside down on paper towels to drain about 15 minutes. (At this point, the drained tomatoes can be stored, covered, in an upright position in the refrigerator up to 12 hours before continuing with the recipe.) Fill each tomato with 1 teaspoon guacamole.
  3. Transfer to a serving platter and garnish each top with cilantro.
  4. Serve at once.


To make Cherry Tomatoes Stuffed with Hummus, substitute prepared hummus for the guacamole and garnish lightly with paprika in lieu of the cilantro
