Carrot Muffins Vegan Diet

Muffins are oh so good and this recipe for them is great. Really, you’ll be impressed with how they are not too sweet, moist and of so very, very good for you. The best of both worlds is possible and the recipe is called ‘crazy carrot muffin’.


  • 1 cup whole-wheat flour
  • 1 cup oats or wheat bran
  • 2 teaspoons baking powder
  • 1 cup raw carrots, grated
  • 1 cup water
  • 1/3 cup sugar or maple syrup
  • 1/4 cup mild-flavored oil or vegan butter, melted
  • 1 tablespoon cornstarch
  • 1 teaspoon allspice
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt


  1. Turn the oven to 375°F and allow it to preheat.
  2. In the meantime, take a large mixing bowl and put into it the oats or bran, flour, cornstarch, baking powder, allspice, cinnamon, and salt and mix them together really well. Then put in the grated carrots, mix in the water as well as the sugar or maple syrup and the oil and mix gently.
  3. Put the batter into a muffin pan that has been lightly oiled. You want each of the tins to be about two-thirds full. Let it bake for 25-30 minutes, or until an inserted toothpick comes out clean. Wait for it cool for 5 minutes before transferring to a baking rack. Let it cool some more and they are ready to be served.
